Rest is led by chef Jimmy Øien, someone who truly believes in sustainability. The restaurant is known for its unique concept – using the ‘rest’ of left-over ingredients and creating gastronomically fantastic recipes. The focus here is to reduce environmental waste while not compromising on taste, presentation, and appetite. The menu comprises over 20 small yet balanced dishes, each with its unique ingredients. The flavours are blended to perfection with a great emphasis on presentation. The ambience is friendly, with minimal seating and an open kitchen. The team has curated a menu that includes fish, vegetarian, meat, wine, and desserts. This is the only place in Oslo that offers fine dining on food waste.
